I love a ‘cheat’ meal, one that’s quick and simple to throw together but still tastes great and the whole family can enjoy. Last night I whipped up this pasta dish in literally less time than it took for the garlic ciabatta we had to accompany it to cook!
1/2 Red onion
3/4 pack Fresh Tagliatelle
1 pack Parma Ham or Prosciutto
Jar Pesto (use as much or little as you like)
Parmigiano Reggiano (sprinkle on finished dish to taste)
Garlic bread type side
Put on a pan of boiling water (no salt if needed for whole family)
Finely chop red onion into half moons, chop Courgette into long matchsticks.
Pop pasta into boiling water and cook for time on packet (usually 6-8 mins or so)
While pasta is cooking, pan fry Parma ham in a dry, hot frying pan for a few minutes (allow to crisp up a little).
Add onion and Courgette to pan with the Parma ham and cook until pasta is ready. As it is finely chopped it should all cook fairly quickly. Stir in a spoonful of pesto to this mix and take off the heat.
Drain pasta leaving in a tiny amount of cooking water, add more pesto into the pasta and dish up. Top with Courgette mix and grate over some parmigiana to taste.
This can be tweaked to suit everyone’s tastes and made veggie suitable by swapping the Parma ham perhaps with some roasted butternut squash. Both my boys wolfed this down last night so it will be going on the list of repeat recipes!
