Courgette and Sweetcorn Fritters
I have been trying to cut down slightly on the number of meat filled dinners we have through the week. Not for any one specific reason but because it’s a bit cheaper, feels a bit healthier to have more veg, and I am enjoying finding new ideas. I found these lovely fritters in an Asda mini magazine filled with lots of recipe ideas and all four of us love them.
Ingredients – Makes 10 (enough for a light meal for 4)
1/2 Courgette, grated.200g tinned Sweetcorn.2 Medium Eggs.4 tbsp Plain Flour.80g Feta Cheese.Seasoning – I mix this up dependant on how I feel and what I have in. I used a large pinch of smoked paprika and garlic powder this time, other times I just add a good grind of black pepper.
Easy as pie…mix all the ingredients together in a medium sized mixing bowl til it makes a chunky batter.
Fry on a medium heat with some oil for roughly 5 mins each side. If you are making a lot, you can pop them in a covered oven proof dish in the oven on a low heat while you complete the batch and are ready to serve.
The Asda recipe called for serving these in a stack of three (I portion 3 for an adult and two for the kids each) with a poached egg on top and some rocket. My poached eggs aren’t the best so I served mine with a fried egg previously. This time I had some mixed leaf salad and lovely Morrison’s Red Pepper and Butternut Squash Croquettes with garlic mayo.
